"le Tonkin"

Indochine was the name for France's colonial territories across the Indochinese Peninsula in the 19th century — today's Vietnam, Laos, Cambodia, Thailand, Myanmar, and Malaysia.

Le Tonkin refers to the northern region of Vietnam within that world — ancient, storied, and deeply flavourful.

Indochine cuisine is where two worlds meet at the table. French culinary technique — precise, refined, patient — blends with the fresh, vibrant ingredients of Vietnamese land and water. The result is something uniquely its own: elegant yet soulful, familiar yet surprising.
